Spicy Cauliflower

Right as I was en route to do my weekly grocery shopping yesterday morning, the Pioneer Woman’s recipe for Spicy Cauliflower Stir-fry showed up in my Facebook newsfeed. I was hungry, and it looked delicious so I naturally picked up a cauliflower and some scallions at the grocery. This quick and tasty veggie was my side dish last night!

I pretty much followed her recipe but made the following heart healthy substitution: I used 1 tablespoon of low-sodium soy sauce instead of two tablespoons of regular soy sauce. (I also added in extra scallions because I love the flavor!) It didn’t taste underseasoned at all–the 1 tablespoon of soy is plenty.

I plan on preparing a few other vegetables this way soon. I think brussels sprouts, broccoli, or asparagus would work perfectly here, too!
