These are so simple–but capture the essence of a macaroon: it’s all about the coconut. The addition of lime zest is refreshing. I took the recipe from Bon Appetit and scaled it down and decreased the sugar. A perfect, quick, less sinful dessert!
- 1, 7oz bag of sweetened coconut flakes
- 2 egg whites
- 1 teaspoon sugar
- 1 teaspoon vanilla
- 2 teaspoons lime zest
- pinch salt
1. Preheat the oven to 325. Whisk the egg whites and teaspoon of sugar until the egg whites foam. Add the vanilla, salt, coconut, and lime zest. With a small (1 tablespoon) ice cream or cookie scoop, scoop out the macaroons onto a parchment or silipat lined baking sheet. Bake about 20 minutes, until golden. Serve.
