Bean salads and bean burgers are a staple in my house – we eat them all the time, which means that we have some favorites but are also always on the look out for new ones to try so we don’t get bored or burnt out on a particular dish.
Jamie Oliver’s website is a gem – not just for beans but for many veggie and health-conscious recipes. When I found this chickpea salad, I made it that same week. And I’ve now made it 5 times this summer.
I love it because it takes 5 minutes.
I love it because it’s a recipe that you can modify or change. You can skip the feta or use less.
I love it because it uses fresh herbs from my little urban garden.
I love it because the chile is a nice kick, and the mint is a refreshing surprise.
I love it because it’s even good leftover the next day (and not all bean salads are).
Jamie Oliver’s recipe is only for the bean salad, but I like to serve it over mixed greens (baby spinach, spring mix, mesclun) tossed with a little vinegar or lemon and olive oil.
